Ingredients: Piper nigrum, possible traces of vanilla.
This exceptional pepper comes from the south of Madagascar, where it draws its unique character from a rare terroir: it grows in the heart of a vanilla plantation.
This aromatic proximity subtly influences its flavor profile, giving it a remarkable sensory richness. Hand-harvested with great care, only when the grains reach an advanced stage of maturity and take on an intense red hue, it is picked directly from the cluster, allowing the younger grains time to mature naturally.
Once harvested, the grains are washed, then fermented for a few hours in water to remove the skin and retain only the core of the pepper.
Finally, they are slowly sun-dried for several days, respecting local artisanal methods.
This pepper reveals a refined aromatic palette: gourmet vanilla notes, elegant vegetal freshness, and a remarkable length on the palate.
Its spiciness remains delicate, balance and fresh.
