Andaliman Pepper - Cofrapep

This berry, related to the famous Szechuan (also sometimes spelled Sichuan, Szechuan), is not a pepper, botanically speaking.

It is a wild berry native to Indonesia, north of the island of Sumatra. It is found in many countries ranging from North India to South China.

This berry is also called the “pepper” of the Bataks. Its nose is surprising, strongly lemony, with a beautiful freshness evoking lemongrass.

In the mouth it is slightly spicy with a small anesthetic effect.

Tips for use: You will use it with seafood, fish and shellfish, white meats and poultry.
