
Sweet Coconut Curry Tofu
Ingredients:
- 1 block firm tofu, cubed
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon honey
- 1 cup cooked jasmine rice
- 1/2 cup diced mango (optional)
Instructions:
- Heat a skillet over medium heat and lightly fry the tofu cubes until golden on all sides. Remove and set aside.
- In the same skillet, pour in coconut milk and add curry powder and honey. Stir until combined.
- Add the tofu back into the skillet and simmer for 5-7 minutes.
- Serve over cooked jasmine rice and top with diced mango, if desired.
Serving Suggestion:
Garnish with fresh cilantro for added brightness.
