Sweet Coconut Curry Tofu

Ingredients:

  • 1 block firm tofu, cubed
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon honey
  • 1 cup cooked jasmine rice
  • 1/2 cup diced mango (optional)

Instructions:

  1. Heat a skillet over medium heat and lightly fry the tofu cubes until golden on all sides. Remove and set aside.
  2. In the same skillet, pour in coconut milk and add curry powder and honey. Stir until combined.
  3. Add the tofu back into the skillet and simmer for 5-7 minutes.
  4. Serve over cooked jasmine rice and top with diced mango, if desired.

Serving Suggestion:

Garnish with fresh cilantro for added brightness.
