Mini Spinach & Feta Pies

Ingredients:

  • 1 package phyllo pastry sheets, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1 egg, beaten
  • 1/4 teaspoon nutmeg
  • Olive oil or melted butter for brushing

Instructions:

  1. Preheat your oven to 190°C (375°F).
  2. In a bowl, mix spinach, feta cheese, ricotta cheese, beaten egg, and nutmeg until well combined.
  3. Cut the phyllo sheets into strips about 3 inches wide. Brush each strip lightly with olive oil or butter.
  4. Place a spoonful of the spinach mixture at the end of a strip and fold into a triangle. Repeat until all filling is used.
  5. Place the triangles on a baking sheet lined with parchment paper and brush the tops with olive oil or butter.
  6. Bake for 20-25 minutes until golden and crisp.

Serving Suggestion:

Serve hot or at room temperature with a side of tzatziki sauce.
