
Mini Spinach & Feta Pies
Ingredients:
- 1 package phyllo pastry sheets, thawed
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1 egg, beaten
- 1/4 teaspoon nutmeg
- Olive oil or melted butter for brushing
Instructions:
- Preheat your oven to 190°C (375°F).
- In a bowl, mix spinach, feta cheese, ricotta cheese, beaten egg, and nutmeg until well combined.
- Cut the phyllo sheets into strips about 3 inches wide. Brush each strip lightly with olive oil or butter.
- Place a spoonful of the spinach mixture at the end of a strip and fold into a triangle. Repeat until all filling is used.
- Place the triangles on a baking sheet lined with parchment paper and brush the tops with olive oil or butter.
- Bake for 20-25 minutes until golden and crisp.
Serving Suggestion:
Serve hot or at room temperature with a side of tzatziki sauce.
