Honey Almond Biscotti

Ingredients:

  • 200g (1 1/2 cups) all-purpose flour
  • 100g (1/2 cup) granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 large eggs
  • 3 tbsp honey
  • 1 tsp pure vanilla extract
  • 100g (3.5 oz) almonds, roughly chopped and lightly toasted
  • Optional garnish: 2 tbsp honey (for drizzling)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 180°C (350°F).
  • Line a baking sheet with parchment paper.

2. Mix the Dry Ingredients:

  • In a large bowl, whisk together 200g (1 1/2 cups) all-purpose flour, 100g (1/2 cup) granulated sugar, 1 tsp baking powder, and 1/4 tsp sea salt.

3. Prepare the Wet Ingredients:

  • In a separate bowl, beat 2 large eggs with 3 tbsp honey and 1 tsp pure vanilla extract until well combined.

4. Combine the Mixtures:

  • Gradually add the wet ingredients to the dry ingredients. Mix with a spatula until a sticky dough forms.
  • Fold in 100g (3.5 oz) of roughly chopped toasted almonds.

5. Shape the Dough:

  • Transfer the dough onto a lightly floured surface.
  • Divide it into two equal portions and shape each portion into a log about 10 inches long and 2 inches wide.
  • Place the logs on the prepared baking sheet, leaving space between them.

6. First Bake:

  • Bake the logs in the preheated oven for 25-30 minutes, or until lightly golden and firm to the touch.
  • Remove from the oven and let them cool on the baking sheet for 10 minutes.

7. Slice and Second Bake:

  • Reduce the oven temperature to 150°C (300°F).
  • Using a sharp serrated knife, slice the logs diagonally into 1/2-inch thick biscotti.
  • Arrange the slices cut-side down on the baking sheet.
  • Bake for an additional 10-12 minutes per side, until crisp and golden.

8. Cool and Serve:

  • Let the biscotti cool completely on a wire rack.
  • Optionally, drizzle with 2 tbsp of honey for added sweetness and shine.
