Honey Almond Biscotti
Ingredients:
- 200g (1 1/2 cups) all-purpose flour
- 100g (1/2 cup) granulated sugar
- 1 tsp baking powder
- 1/4 tsp sea salt
- 2 large eggs
- 3 tbsp honey
- 1 tsp pure vanilla extract
- 100g (3.5 oz) almonds, roughly chopped and lightly toasted
- Optional garnish: 2 tbsp honey (for drizzling)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Line a baking sheet with parchment paper.
2. Mix the Dry Ingredients:
- In a large bowl, whisk together 200g (1 1/2 cups) all-purpose flour, 100g (1/2 cup) granulated sugar, 1 tsp baking powder, and 1/4 tsp sea salt.
3. Prepare the Wet Ingredients:
- In a separate bowl, beat 2 large eggs with 3 tbsp honey and 1 tsp pure vanilla extract until well combined.
4. Combine the Mixtures:
- Gradually add the wet ingredients to the dry ingredients. Mix with a spatula until a sticky dough forms.
- Fold in 100g (3.5 oz) of roughly chopped toasted almonds.
5. Shape the Dough:
- Transfer the dough onto a lightly floured surface.
- Divide it into two equal portions and shape each portion into a log about 10 inches long and 2 inches wide.
- Place the logs on the prepared baking sheet, leaving space between them.
6. First Bake:
- Bake the logs in the preheated oven for 25-30 minutes, or until lightly golden and firm to the touch.
- Remove from the oven and let them cool on the baking sheet for 10 minutes.
7. Slice and Second Bake:
- Reduce the oven temperature to 150°C (300°F).
- Using a sharp serrated knife, slice the logs diagonally into 1/2-inch thick biscotti.
- Arrange the slices cut-side down on the baking sheet.
- Bake for an additional 10-12 minutes per side, until crisp and golden.
8. Cool and Serve:
- Let the biscotti cool completely on a wire rack.
- Optionally, drizzle with 2 tbsp of honey for added sweetness and shine.
