Garlic Herb Flatbread

Ingredients:

  • 2 1/4 tsp (1 packet) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 2 tsp sugar
  • 3 cups all-purpose flour
  • 1 tsp sea salt
  • 2 tbsp olive oil (plus extra for brushing)
  • 2 cloves garlic, finely minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp freshly cracked black pepper

Instructions:

1. Activate the Yeast:

  • In a small bowl, mix 1 cup of warm water, 2 tsp of sugar, and 2 1/4 tsp of active dry yeast. Stir gently and let it sit for 5-10 minutes until it becomes frothy. This means the yeast is activated.

2. Make the Dough:

  • In a large mixing bowl, combine 3 cups of all-purpose flour and 1 tsp of sea salt.
  • Gradually add the yeast mixture and 2 tbsp of olive oil to the flour. Mix with a spoon or your hands until a rough dough forms.

3. Knead the Dough:

  • Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic.

4. Let the Dough Rise:

  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour, or until it doubles in size.

5. Prepare the Topping:

  • In a small bowl, mix 2 tbsp of olive oil, 2 finely minced garlic cloves, 2 tbsp of chopped fresh parsley, 1 tsp of dried oregano, and 1/2 tsp of freshly cracked black pepper.

6. Shape the Flatbread:

  • Preheat your oven to 475°F (245°C) or heat a grill pan over medium-high heat.
  • Punch down the dough and divide it into 4 equal portions. Roll each portion into a flat oval or circle about 1/4 inch thick.

7. Cook the Flatbread:

  • If using an oven: Place the flatbread on a baking sheet lined with parchment paper. Brush with the garlic herb mixture and bake for 8-10 minutes, or until golden and slightly crispy.
  • If using a grill: Place the flatbread on the hot grill and cook for 2-3 minutes per side. Brush with the garlic herb mixture immediately after cooking.

8. Serve:

  • Serve the flatbread warm with a side of olive oil for dipping or as an accompaniment to soups and salads.
