Crispy Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/3 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • Olive oil for frying
  • Sour cream or Greek yogurt for serving

Instructions:

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture using a kitchen towel.
  2. In a mixing bowl, combine the zucchini, flour, Parmesan cheese, beaten egg, and garlic powder. Mix well.
  3. Heat a large skillet over medium heat with a drizzle of olive oil.
  4. Scoop small portions of the mixture (about 2 tablespoons each) into the skillet and flatten slightly with a spatula.
  5. Cook for 3-4 minutes on each side until golden and crispy.
  6. Drain on a paper towel and serve warm with sour cream or Greek yogurt.

Serving Suggestion:

Perfect as a standalone appetizer or paired with a tangy dipping sauce.
