Crispy Zucchini Fritters
Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/3 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 teaspoon garlic powder
- Olive oil for frying
- Sour cream or Greek yogurt for serving
Instructions:
- Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture using a kitchen towel.
- In a mixing bowl, combine the zucchini, flour, Parmesan cheese, beaten egg, and garlic powder. Mix well.
- Heat a large skillet over medium heat with a drizzle of olive oil.
- Scoop small portions of the mixture (about 2 tablespoons each) into the skillet and flatten slightly with a spatula.
- Cook for 3-4 minutes on each side until golden and crispy.
- Drain on a paper towel and serve warm with sour cream or Greek yogurt.
Serving Suggestion:
Perfect as a standalone appetizer or paired with a tangy dipping sauce.
