Classic Tiramisu
Ingredients:
- 250g (9 oz) mascarpone cheese
- 3 large eggs, separated
- 100g (1/2 cup) granulated sugar
- 1 tsp pure vanilla extract
- 1 cup espresso or strong coffee, cooled
- 2 tbsp coffee liqueur (optional)
- 200g (7 oz) ladyfingers (savoiardi biscuits)
- 2 tbsp unsweetened cocoa powder, for dusting
Instructions:
1. Prepare the Mascarpone Cream:
- In a large mixing bowl, whisk 3 egg yolks with 100g (1/2 cup) sugar until the mixture becomes pale and creamy. This may take 3-5 minutes using a hand whisk or mixer.
- Add 1 tsp of pure vanilla extract and 250g (9 oz) of mascarpone cheese to the yolk mixture. Gently fold the mascarpone in until smooth and well combined.
2. Whip the Egg Whites:
- In a separate clean bowl, beat the 3 egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the mascarpone mixture in three batches, using a spatula. Be careful not to deflate the mixture.
3. Prepare the Coffee Mixture:
- In a shallow dish, combine 1 cup of cooled espresso or strong coffee with 2 tbsp of coffee liqueur (if using).
4. Layer the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- Arrange a layer of soaked ladyfingers at the bottom of a rectangular or square dish (approx. 9x9 inches).
- Spread half of the mascarpone cream evenly over the layer of ladyfingers.
- Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone cream.
5. Chill the Tiramisu:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
6. Finish and Serve:
- Before serving, dust the top of the tiramisu generously with 2 tbsp of unsweetened cocoa powder. Use a fine mesh sieve for an even coating.
- Slice into portions and serve chilled.
Serving Tip:
For an extra indulgent touch, add a dollop of whipped cream or a sprinkle of grated chocolate on each serving.
