Cinnamon Sugar Doughnuts
Ingredients:
For the Doughnuts:
- 2 1/4 tsp (1 packet) active dry yeast
- 1/4 cup warm water (110°F/45°C)
- 3/4 cup warm milk (110°F/45°C)
- 1/4 cup granulated sugar
- 3 tbsp unsalted butter, melted
- 1 large egg
- 1/2 tsp sea salt
- 3 cups all-purpose flour
For Frying:
- Vegetable oil (for deep frying)
For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 2 tsp ground cinnamon
Instructions:
1. Activate the Yeast:
- In a small bowl, mix 2 1/4 tsp of active dry yeast with 1/4 cup of warm water and 1 tsp of sugar. Let sit for 5-10 minutes until frothy.
2. Mix the Dough:
- In a large mixing bowl, combine the activated yeast mixture, 3/4 cup warm milk, 1/4 cup sugar, 3 tbsp melted butter, and 1 large egg. Stir until well combined.
- Gradually add 3 cups of all-purpose flour and 1/2 tsp sea salt, mixing with a spoon or stand mixer fitted with a dough hook.
3. Knead the Dough:
- Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for 5-6 minutes.
4. First Rise:
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
5. Shape the Doughnuts:
- Punch down the dough and roll it out on a floured surface to about 1/2 inch thick.
- Use a round cutter (about 3 inches) to cut out doughnut shapes. For the center holes, use a smaller cutter (about 1 inch).
- Place the doughnuts and holes on a baking sheet lined with parchment paper. Cover lightly with a cloth and let rise for 30 minutes.
6. Heat the Oil:
- In a deep pan or fryer, heat vegetable oil to 180°C (350°F). Use a thermometer to maintain the temperature.
7. Fry the Doughnuts:
- Fry 2-3 doughnuts at a time, cooking for 1-2 minutes per side, or until golden brown.
- Remove with a slotted spoon and drain on a plate lined with paper towels.
8. Prepare the Cinnamon Sugar:
- In a shallow bowl, mix 1/2 cup granulated sugar with 2 tsp ground cinnamon.
9. Coat the Doughnuts:
- While the doughnuts are still warm, roll them in the cinnamon sugar mixture until evenly coated.
10. Serve:
- Serve the doughnuts warm for the best flavor and texture.
