Beef Stroganoff

Ingredients:

  • 1 pound beef sirloin, sliced thinly
  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 cup mushrooms, sliced
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a skillet and cook the beef until browned. Remove and set aside.
  2. In the same skillet, sauté onions and mushrooms until softened.
  3. Add beef broth, sour cream, and Dijon mustard. Stir until combined and simmer for 5 minutes.
  4. Return the beef to the skillet and simmer for another 5 minutes.

Serving Suggestion:

Serve over egg noodles or mashed potatoes.
