Beef Stroganoff
Ingredients:
- 1 pound beef sirloin, sliced thinly
 - 2 tablespoons olive oil
 - 1/2 onion, chopped
 - 1 cup mushrooms, sliced
 - 1 cup sour cream
 - 1 cup beef broth
 - 1 tablespoon Dijon mustard
 - Salt and pepper to taste
 
Instructions:
- Heat olive oil in a skillet and cook the beef until browned. Remove and set aside.
 - In the same skillet, sauté onions and mushrooms until softened.
 - Add beef broth, sour cream, and Dijon mustard. Stir until combined and simmer for 5 minutes.
 - Return the beef to the skillet and simmer for another 5 minutes.
 
Serving Suggestion:
Serve over egg noodles or mashed potatoes.
